BBQ Tofu


1 pound Extra-firm Tofu, frozen, thawed and squeezed to remove excess water
¼ cup Water
2 tablespoons Peanut Butter
1 tablespoon Soy Sauce
1 clove Garlic, minced
Pinch Black Pepper, ground
1 cup Barbecue Sauce


Preheat oven to 350 degrees. 

Cut tofu into ½ inch thick strips. Line a cookie sheet with parchment paper or use a nonstick cookie sheet and arrange tofu strips on sheet.

Mix together the water, peanut butter, soy sauce, garlic and pepper and pour over the tofu strips. Press this mixture into the strips with your hand.

Bake for approximately 15 minutes. Turn tofu, cover with barbecue sauce and bake another 10 minutes.

Serve this with a variety of salad vegetables or your favorite whole grain bread.
