Black Beans Over Rice
2 cloves Garlic, minced
1 whole fresh Tomato, peeled and diced
1 can Black beans
1 Bay leaf
½ cup Salsa
1 teaspoon Cumin
1 ½ cups Brown Rice, cooked (optional)
Sauté garlic in a small amount of water for 1 minute. Add diced tomato and simmer on medium to low heat, until the tomato is fully cooked (about 5 minutes).
Add black beans, bay leaf, salsa, and cumin to the tomato mixture, stir and simmer covered for 10 minutes.
Serve alone as a side dish. For a meal, serve over rice, vegetables or steamed greens.
