Black Eyed Pea Salad
2 (15) ounce cans Black-Eyed Peas, rinsed and drained
1 can Shoepeg Corn, rinsed and drained
1 Green Pepper, diced
4 Scallions, diced
2 or 3 Tomatoes, seeded and diced
½ large Purple Onion, diced
2 cloves Garlic, minced
8 ounces Fat Free Italian Dressing
Combine all ingredients in a large bowl.
Chill and serve.
