Cabbage Soup


1/2 to 1 head Cabbage

6 Onions

2 Green Bell Peppers

1 bunch Scallions

1 bunch Celery

6 Carrots

16 ounce bag frozen Green Beans

1 1/2 cups V-8 or tomato juice

28 ounce can Crushed Tomatoes

1/4  cup McKay’s “Beef” or “Chicken” seasoning

Black Pepper, to taste

Herbs, to taste

1/2 cup Balsamic Vinegar

1 cup Pearled Barley


Chop vegetables into bite size pieces. Combine all ingredients in a very large stockpot, and add enough water to cover. Boil 10 minutes.

Reduce to a simmer and continue cooking until vegetables are tender, approximately 1 hour.
