1 Onion, chopped
1 Potato, peeled and chopped
1 Carrot, chopped
½ Red, Orange or Yellow Sweet Pepper, chopped
1 tablespoon Garlic, minced or 1 teaspoon Garlic Powder
½ cup Raw Cashews
1 ½ teaspoons Lemon or Lime Juice
½ to 1 teaspoon Dijon Mustard
2 tablespoons Earth Balance
1 teaspoon Salt
Place onion, potato, carrot, and bell pepper into a pot with enough water to cover. Cook until tender.
Place raw cashews, garlic, lemon or lime juice, mustard, Earth Balance, salt and ½ cup vegetable cooking water into a Vita-Mix or blender and process until smooth.
Add the cooked vegetables, without the broth, to the Vita-Mix or blender. Continue processing until smooth, adding more vegetable cooking water if mixture is too thick.
Use as a topping for macaroni, broccoli, potatoes or anything you like. Add a little salsa for a healthy queso sauce.
