Cheese Sauce


½ Onion, chopped

1 small Potato, peeled and chopped

3 Carrots, chopped

1 jar Roasted Red Peppers, rinsed, drained, and chopped

1 tablespoon Garlic, minced or 1 teaspoon Garlic Powder

½ cup Raw Cashews

1 ½ teaspoons Lemon or Lime Juice

1 teaspoon Yellow or Honey Mustard

3 tablespoons Earth Balance

½ teaspoon Salt


Place onion, potato, carrot, and bell pepper into a pot with enough water to cover. Cook until tender.

Place raw cashews, garlic, lemon or lime juice, mustard, Earth Balance, salt and ½ cup vegetable cooking water into a Vita-Mix or blender and process until smooth.

Add the cooked vegetables, without cooking water, to the Vita-Mix or blender. Continue processing until smooth, adding more vegetable cooking water if mixture is too thick.

Use as a topping for macaroni, broccoli, potatoes or anything you like. Add a little salsa for a healthy queso sauce.
