Easy Vegetable Casserole
2 packages frozen Mixed Vegetables, any variety
1 large bag frozen Spinach (chopped Broccoli or Brussels sprouts works well too)
1 bag frozen Bell Peppers and Onions
1 bag Non-dairy Cheese, grated
3-4 cups Egg Beaters
1 cup Non-dairy Milk
1 tablespoon Tarragon
½ tablespoon Basil
Add a little Black or Cayenne pepper for a spicier version
Preheat the oven to 350 degrees.
Place first 3 ingredients into a large casserole dish and place in oven.
When vegetables are thawed, add the remaining ingredients. Stir, return to oven and bake for about 1 hour.
