Farmer's Market Stew


1 large Sweet Onion, chopped

1 Celery Rib, chopped

1 medium Eggplant, peeled and chopped

1 Red Pepper, chopped

2 cloves Garlic, minced

1 tablespoon Chili Powder

1 1/2 cups Water

14.5 ounce can Diced Tomatoes

2 cups Garbanzo beans, cooked

1 cup Corn Kernels


In a large skillet over medium heat, add water to sauté onion, celery, eggplant, red pepper and garlic until softened, 8-10 minutes.

Transfer vegetables to a slow cooker and add the remaining ingredients. Mix well and cook on low for 6 to 8 hours.
