French Lentil Stew

Ingredients

1 Leek, finely chopped
2 cloves Garlic, finely chopped
2 Carrots, peeled and finely chopped
2 cups French Lentils
1 teaspoon fresh Thyme (2 stems with leaves attached works great)
3 Bay leaves
1 cup dry White Wine
2 cups Vegetable broth
3 cups Water

Preparation

Heat a large heavy pot on medium heat. Add leeks, carrots, garlic, and a small amount of broth and saute, stirring occasionally, until soft. Add wine, broth, water, lentils, bay leaves and thyme. Bring to a boil, then reduce and simmer until lentils are tender and have absorbed most of the water, about 25 minutes (exact cooking time may vary, check you package for suggested cooking times) Remove thyme stems and bay leaves before serving.
