2 cloves Garlic, minced
1/2 medium Onion, diced
1 large Roma or Plum Tomato, seeded and finely chopped
3 tablespoons fresh Parsley, chopped
2 cups Cauliflower florets, steamed until just tender
1/4 cups White Wine
Vegan Parmesan Cheese, optional
Sauté onion and garlic in a small amount of water until tender, 5 to 7 minutes.
Add the tomato and parsley and cook for 2 more minutes, stirring frequently.
Add the cauliflower and white wine. Cook while tossing for approximately 5 more minutes. Serve immediately topped with a sprinkle of vegan parmesan cheese if desired.
Note: Balsamic vinegar can be substituted for the white wine for a new and different taste.
