Italian Spaghetti Squash
1 Spaghetti Squash
1 small Onion, diced
8 ounces Mushrooms, sliced
1 each Green, Red and Yellow Bell Peppers, chopped
1 can Italian Stewed Tomatoes
8 ounces Spaghetti Sauce
Preheat oven to 400 degrees.
Cut squash in half, lengthwise, and remove all seeds.
Place cut side down on a baking dish. Place approximately 1 cup of water in the baking dish. Bake at 400 degrees for approximately 45 to 60 minutes, or until easily pierced by a fork.
Meanwhile, place onions and peppers in a sauté pan and sauté in a small amount of water until soft.
Add mushrooms and sauté until they release their juice.
Add Italian stewed tomatoes and spaghetti sauce. Heat thoroughly.
When squash is done, remove from oven and shred the insides with a fork.
Scoop out the squash and spoon sauce over it. Serve immediately.
