Kale with Raisins and Pine Nuts
1 clove Garlic, chopped
1-2 bunches fresh Kale, stems removed, chopped and rinsed
1 tablespoon Raisins
1 tablespoon Pine Nuts, lightly toasted
1 tablespoon Balsamic Vinegar
Sauté garlic in small amount of water for 1 minute. Add kale and stir. Cover and cook for 2 minutes. If water evaporates, add 2 tablespoons of water.
Add raisins and pine nuts. Cover and cook for 2 minutes.
Add balsamic vinegar. Cover and cook for 2 minutes.
Serve warm or at room temperature by itself or on whole grain pasta.
