2 cups Lentils, dried (about 1 pound)
½ cup Brown Rice
1 Onion, diced
1 can Tomatoes, diced
½ teaspoon Garlic Powder
5 ½ cups Water or Vegetable Broth
1 cup frozen Spinach, chopped
1 teaspoon Cumin
½ teaspoon Chili Powder
½ cup Raisins
Rinse and drain lentils and rice.
Sauté onion in a small amount of water until tender.
Add all ingredients, except raisins, to a slow cooker and cook on low for 6-8 hours or on high for 2-4. Add raisins 5-10 minutes before serving.
Alternatively, this can be cooked on the stove top – just bring to a boil, reduce heat and simmer for 35 minutes. Add raisins and let simmer for another 5-10 minutes. Serve and enjoy!
