Mexicali Corn Salad


2 cups fresh Corn Kernels

1/2 cup Red Pepper, chopped

1/2 cup Yellow Pepper, chopped

1/2 cup Scallion, chopped

1/4 cup Cilantro, chopped

4-5 Green Olives, sliced

2 tablespoons Lemon Juice

2 tablespoons Rice Vinegar

1 tablespoon Liquid Aminos or Soy Sauce or Tamari

1/2 teaspoon Cumin, ground 

Pinch Cayenne, to taste    


In a small bowl, combine all ingredients. Toss and serve.
