Mock Tuna Salad
19 ounce can Garbanzo beans, rinsed, drained and mashed
1 Celery Stalk, diced
1 tablespoon Green Onion, minced
2 tablespoons Carrot, grated
2 tablespoons Vegan Mayonnaise or less to taste
2 tablespoons Tamari or Soy Sauce
1 tablespoon Lemon Juice
Mix the celery, onion and carrot into the mashed garbanzo beans.
Stir together the mayonnaise, tamari, and lemon juice in a small bowl.
Add the mayonnaise mixture to the mashed beans and vegetables and mix well.
