Pecan Pie Energy Bars
½ cup Steel Cut Oats
1½ cups Pecan, halves
2 tablespoons Date Sugar
⅛ teaspoon Sea Salt
1 teaspoon Cinnamon
3 tablespoons Maple Syrup
1 teaspoon Vanilla
Add oats to a food processor and process until well chopped.
Add pecans, date sugar, sea salt, and cinnamon and process until nuts are well chopped.
Add maple syrup, and vanilla and pulse until the mixture clumps and holds together.
Line a 9x5 loaf pan with parchment paper. Press the mixture evenly into the pan. Overlap the parchment and press again to ensure it is tightly packed.
Place in the freezer for 60 minutes before slicing. Wrap individually and store in the refrigerator.
