Spinach with Raisins and Pine Nuts
1/2 cup Pine Nuts
1 tablespoon Olive Oil
2-3 cloves Garlic, chopped
1 pound fresh Spinach
1/2 cup Raisins – plumped for 10 minutes in warm water, then drain
Sauté pine nuts in the olive oil over medium heat, until they start to brown.
Add garlic and stir.
Add spinach and cook until wilted. Stir in raisins and serve.
