Spinach with Tomatoes
1 small Onion, diced
15 ounce can Diced Tomatoes
3 tablespoons Apple Cider Vinegar
1 tablespoon Sugar
1 pound Spinach, fresh or frozen
Sauté onion in a small amount of water until translucent.
Add tomatoes, cider vinegar, and sugar. Heat to a boil.
Add spinach and cook until wilted. Serve hot.
