Sweet and Sour Cabbage
1 medium Onion, thinly sliced
1 small head Red or Green Cabbage, shredded or thinly sliced
1/3 cup Red Wine Vinegar
1 large Granny Smith Apple, peeled, quartered, and cored
1 tablespoon Sugar
1 cup Vegetable stock
Salt and Pepper to taste
In a large sauté pan, cook the onion in a small amount of water until translucent.
Add the cabbage and cook, stirring occasionally, until the cabbage begins to wilt, 3 to 5 minutes.
Stir in the vinegar and toss to coat the cabbage. Stir in the apple, sugar and stock. Cover and simmer over low heat until the apple is quite tender, 15 to 20 minutes.
Uncover, season with salt and pepper to taste. Simmer over medium-low heat until most of the liquid is evaporated, 10 to 15 minutes.
