Tortilla Pie Casserole
1 Onion, diced
1 Green Pepper, diced
1 can Black beans, rinsed and drained
1 tablespoon Beef seasoning
Mexican seasonings to taste (Try chili powder, cumin and garlic powder)
1 cup TVP, re-hydrated with boiling water
2 cups Taco or Enchilada sauce, divided
3 Whole Wheat Tortillas
1/4 cup Veggie Cheddar or Monterey Jack Cheese, shredded
Preheat oven to 350 degrees.
In a small pan, sauté onion and pepper in 4 tablespoons of water until translucent. Add black beans and set aside.
In a small bowl, mix “beef” seasoning and Mexican seasoning into re-hydrated TVP and set aside.
In a large pie dish, layer the ingredients in the following order:
1/2 cup Enchilada Sauce
1/2 of the Bean mixture
1/2 of the TVP mixture
Top with remaining tortilla, enchilada sauce and shredded veggie cheese.
Place in preheated oven and bake for approximately 30 minutes.
Remove from oven, let cool for 5 minutes and serve.
