Zingy Black Beans
1 cup Onion, finely chopped
2-4 Jalapeno peppers, finely chopped
¾ cup Carrots, shredded
2 tablespoons fresh Cilantro, finely chopped
2 tablespoons Parsley flakes
3 tablespoons Garlic, dried
1 teaspoon Cumin
1 teaspoon Coriander
2 teaspoons Chili powder, more if you wish
½ cup Tomato sauce
2 cups Brown Rice, cooked
2 15 oz cans Black beans, rinsed and drained
In a large bowl, combine all ingredients and mix thoroughly.
Place ingredients in to a casserole dish, cover and bake in a 350 degree oven for 30 minutes.
Remove cover and continue baking for another 15 minutes.
