Zucchini "Crab" Cakes
2 1/2 cups Zucchini, grated
Egg Replacer, equivalent to 1 egg
2 tablespoons Earth Balance, melted
1 cup Bread Crumbs
1/4 cup Onion, minced
1 teaspoon Old Bay Seasoning
1/4 cup Whole Wheat Flour
In a large bowl, combine zucchini, egg replacer and Earth Balance.
Stir in bread crumbs, minced onion and seasoning. Mix well.
Shape mixture into patties. Dredge in flour.
Heat a skillet over medium-high heat, spray with cooking oil lightly and cook patties until golden brown on both sides.
